This Kitchari Kit provides all the basic supplies you need to make Kitchari for 3 or 7 days:
- Organic Mung Dal: Hulled, split yellow mung beans are called mung dal, are tridoshic, antiacid and rich with antiacid properties.
- Organic Basmati Rice: Basmati is a long-grained rice that has a delicious and gentle flavor and aroma, and is easy to digest.
- Spice Mix (of your choice): Our traditional spice mixes helps stimulate your agni (digestive fire), that allows you to readily absorb the nourishment from kitchari.
Kitchari means mixture, and when rice and dal are cooked together they combine to make a delicious, thick soup that is nourishing, easy to digest, tridoshic and a wonderful digestive reset.
This complete food is easy to digest and gives strength and vitality. It nourishes all the tissues of the body. Kitchari is the preferred food to use when fasting on a mono-fast or while going through cleansing programs such as panchakarma. Kitchari is excellent for detoxification and removing ama (toxicity) from the body and mind.
This is one Kitchari Recipe that is particularly nourishing and easy to digest.
1/2 cup basmati rice
1/2 cup mung dal
5 cups (approx.) water
1/2 to 1 inch ginger root, chopped or grated
A bit of himalayan salt (1/4 tsp. or so)
2 tsp. ghee or oil
2 tsp of one of our Spice Mixes
Handful of fresh cilantro leaves
1 and 1/2 cups assorted vegetables (optional)
Wash rice and dal separately in at least 2 changes of water. Add the 5 cups of water to the rice and dal and cook covered until it becomes soft, about 20 minutes.
While that is cooking, prepare any vegetables that suit your constitution. Cut them into smallish pieces. Add the vegetables to the cooked rice and dal mixture and cook 10 minutes longer.
In a separate saucepan, sauté the spice mix in the ghee or oil until they gently fragrant. Stir the sautéed spices into the cooked dal, rice, and vegetable mixture. Add the himalayan salt and chopped fresh cilantro and serve.
